Genesis - The Lamb Lies Down on Broadway - deserves a mention, even if it could have 'happily' lost the odd track.... (likewise The Beatles [white album] mentioned above)
Probably The River (Springsteen) for me (even that could have easily lost a couple of tracks [or, preferably, had them substituted for other stuff he had 'in the can'].
'Officially' the answer is probably Dylan's Blonde on Blonde....

A bit hard to remember what were 'double-albums' on vinyl after nearly 40 years of cds?.

I suppose Derek & the Dominos- Layla And Assorted Love Songs must be a contender?.

Yes, and many later single CDs would probably have to had been double albums if released on vinyl...

Nai was Who's Next a double-vinyl album?. I thought of it but wasn't sure if it was a double?. Was Tommy a double-vinyl album?.
