I just mastered Bowie's Lady Stardust on piano, and am wondering in my ignorance what are some other pieces of similar difficulty that I could take a stab at?

A number of Beatles songs like Penny Lane, The Long and Winding Road, Hey Jude, Yesterday, etc. And just about anything by Elton John.

Hardly one of the easiest to learn, but wouldn't it be wonderful to play ERic Carmen's "All By Myself" complete with the mid section of the classical piece on which it was based,Sergei rahmaninoff's "Piano Concerto No.2 in C minor"?ANother nice one might be the Stones's "Ruby Tuesday"..........

Another classic one that may be a hard one to learn is The Rolling Stones(Like A Rainbow).

Yeah, both "Ruby Tuesday" and "She's a Rainbow" are great keyboard songs and "Angie" is interesting to play on the piano. Another song with a classical style intro is "Morning Has Broken" by Cat Stevens and "Year of the Cat" by Al Stewart is also a great keyboard song.

If you're looking for something fairly easy, I've read Coldplay songs like 'Clocks' is pretty straightforward.

Being a Muse fan I have to mentioned them - they have some great piano/keyboard, some of the easiest I imagine (not being a pianist) would be tracks like 'Exogenesis Symphony Pt. 3', 'New Born' and 'Sunburn' .

Don't Stop Believin' by Journey. That's one of my favorites.

^^^ That's a great song for the piano. Also "Faithfully", "Open Arms" and "Winds of March" are good Journey songs to learn on the piano.
