US:

The Monkees: Porpoise Song (maybe- I like a lot of Monkees tunes)
The Grateful Dead: China Cat Sunflower
The Jimi Hendrix Experience: All Along The Watchtower
The Byrd's: Eight Miles High
The Beach Boys: Good Vibrations
Jefferson Airplane: White Rabbit
The Lovin' Spoonful: Summer In The City
The Velvet Underground: Femme Fatale
Creedence Clearwater Revival: Up Around The Bend
The Mamas and the Papas: Monday, Monday

UK:

The Beatles: (tough one..) Strawberry Fields Forever or A Day In The Life
The Rolling Stones: Gimme Shelter
The Kinks: Sunny Afternoon
The Who: Substitute
Pink Floyd: Time
Cream: Tales Of Brave Ulysses or Sunshine Of Your Love
The Zombies: Time Of The Season
Led Zeppelin: What It Is And What Should Never Be
Mott The Hoople: All The Young Dudes
The Yardbirds: Shapes Of Things

Honorable mention to Julie Driscoll and Brian Auger, 'This Wheel's On Fire' from 1968, and 'Itchycoo Park' by the Small Faces, 1967. Great tunes.

Some interesting responses so far, think I'll post my own list now:

US
1. Aerosmith - Sweet Emotion
2. The Allman Brothers Band - Jessica
3. Blue Oyster Cult - (Don't Fear) The Repear
4. The Doors - Light My Fire (I must admit I'm only really familiar with their best known songs).
5. Eagles - Tough one, I think for sheer enjoyment Take It Easy comes top (I find it a real wrench choosing between this and The Last Resort though).
6. Grateful Dead - Can't pick one, I'm no deadhead.
7. The Jimi Hendrix Experience - All Along The Watchtower
8. Lynyrd Skynyrd - Free Bird. Yes, probably the most obvious choice, but I don't think the guitars of Gary Rossington and Allen Collins on this can be beaten.
9. R.E.M. - Man On The Moon. Great song, never fails to cheer me up either.

UK & Ireland
10. The Beatles - George is the member I have the most respect for so When My Guitar Gently Weeps.
11. Deep Purple - Smoke On The Water
12. The Kinks - Lola
13. Led Zeppelin - When The Levee Breaks. For me it's the finest example of their blending of the blues with hard rock.
14. Queen - Not really a fan of any of the songs I've heard by them.
15. Pink Floyd - Shine On You Crazy Diamond is my favourite as you may know. Plenty of great ones to choose from though!
16. The Rolling Stones - Gimme Shelter
17. U2 - Where The Streets Have No Name
18. The Who - Not totally sure, think I'll probably go for My Generation though.

19. Fleetwood Mac - The Chain. My favourite track from one of my absolute favourite albums, and I thought I might as well use this slot for a band which had both UK and US members.

Looking back I wish I'd chosen a different US band to the Grateful Dead, I wasn't alone in not naming a favourite by them. Wasn't sure who else to include, though if I did this again I might have gone with CCR instead.

PapaJacques, you gave a decent list of bands there (mainly from the 1960s I notice) but unfortunately they were not the bands I listed in my original post. Just wanted to clear this up to prevent any confusion.

No problem, there was nothing wrong with your list in itself (and Time is one of my two favourites from Pink Floyd's shorter songs along with Comfortably Numb so you've got good taste :grinthumb).
