For me, it's George Harrison of the Beatles.
Of course, his work with the Beatles is superb. From his guitar work on Lennon/McCartney songs, to his own well-known songwriting skills, he truly was a superb musician with the Beatles.
Then, he went onto a solo career. Everything in there is at least listenable, even his experimental album to a certain extent, and his soundtrack album "Wonderwall Music" (which inspired an Oasis song). From there, his solo career really took off with "All Things Must Pass" and "Living in the Material World". In his mid-career, he's often panned as mediocre by the critics, but I like albums such as "Dark Horse", "Extra Texture" and "Gone Troppo", and he finished with a bang, with "Cloud Nine", the Traveling Wilburys and "Brainwashed".
