Here are a couple of great covers:

I am the Walrus (Beatles original) covered by Spooky Tooth (The Last Puff).

Born Under a Bad Sign (Albert King original, I think) covered by Pat Travers... who is a master at doing covers btw.

About two other covers mentioned before: I agree with previous posters about "All Along the Watchtower" by Jimi Hendrix and "Blinded by the Light" (Springsteen) by Manfred Mann's Earth Band, are probably among the greatest covers that I know of.
