Tommy Iommi brought a heavy guitar sound, plus he had less fingers to play with. His sound was part of the doom metal influence.

Gotta go with Jeff Beck. Fusion pioneer in the 70's. Then in '89 put out Guitar Shop which had lots of quirky guitar sounds. Then in the late 90's and early 2000's fused his playing with techno to great effect.

Carlos Santana. If you hear him play regardless of what, when or where you know it is him playing.

Jeff Beck is another one which was already mentioned and one of my favorites.

David Gilmour is another one with a unique style.
