If I had to pick a top 5, I'd say:

One of These Days (Pink Floyd)
Jessica (Allmans)
Samba pa Ti (Santana)
Elizabeth Reed (Allmans)
Frankenstein (Edgar Winter Group)

It's hard to limit to just one, found several lists of the best rock instrumentals -- several of them DO have One of These Days and so many list Green Onions too (not one of my faves, but to each his own).

La Villa Strangiato (my favorite piece of music anyone has ever done)
Excerpts from Six Wives of Henry VIII (Yessongs version)
Lark's tounges in Aspic pt1 and 2 (yes, I cheated)
Frankenstein
Transylvania

I have to admit that some of my favorites I don't know the names of. There is that early 60s piece that is very simple and features an organ and rather stacatto accompanying instruments, several Allman Brothers pieces and so many I'm sure I'm forgetting. I'll have to revisit this one.

Those are great rock instrumentals LaraP. They'd all make my list.

I agree Jake T, I'm going down both lists at the moment while working, trying to listen to some I don't think I've heard. Some I do know -- I just didn't know I knew them. Might stop in a bit b/c things start to run together a bit...
